- 1 c. brown rice, uncooked
- 1 c. ready to serve reduced sodium fat-free chicken broth
- 1 2/3 c. water
- 2 tsp. reduced calorie margarine
- 1 c. chopped onion
- 1 c. chopped green pepper
- 1 (8 oz.) can sliced mushrooms, drained
- 1 Tbsp. low sodium soy sauce
- 1/8 tsp. salt
- 1/8 tsp. pepper
Directions

1Combine first 3 ingredients in a saucepan; bring to a boil. Cover; reduce heat and simmer 50 minutes or until moisture is absorbed.

2Melt margarine in a heavy skillet.

3Add water chestnuts and mushrooms; cover and simmer 5 minutes.

4Add soy sauce, salt and pepper and stir in rice.

5Yields 6 servings (158 calories, 10% from fat, per 1 cup serving).
