  • 1 cup yellow onion, small cube
  • 2 cups zucchini, small cubes
  • 1 cup Japanese eggplant, small cubes
  • 1 cup red bell pepper, small cubes
  • 4 garlic cloves, minced
  • 12 cups cooked rice, day old
  • 14 cup teriyaki sauce
  • oil
  • salt
  • 2 stalks green onions, minced

Directions

    In a wok coat with oil add vegetable mixture and saute until the vegetable is Al dente.

    Add in cooked rice and saute and lightly toast the rice.

    Add teriyaki sauce and add salt to taste.

    Mix in green onion and blend.
