Ingredients
- 2 c. sliced zucchini
- 1/2 c. sliced fresh mushrooms
- 1/2 c. chopped green pepper
- 1/2 c. chopped onion
- 1/2 tsp. garlic powder
- 2 Tbsp. olive oil
- 1 (14.5 oz.) can peeled tomatoes
- 1 (6 oz.) can tomato paste
- 1/2 c. water
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. parsley flakes
- 1 tsp. oregano
Directions

1In olive oil, gently saute zucchini, mushrooms, green pepper, onion and garlic powder.

2Add tomatoes, tomato paste, water and additional spices.

3Stir to break up tomatoes.

4Bring the sauce to a boil and continue cooking, uncovered, 20 minutes. Stir occasionally.

5Serve over pasta, veal, chicken or beef.
