- 1 T. vegetable oil
- 1/2 lb. mozzarella cheese, sliced thin
- 1 1/2 T. snipped chives (or 1 T. chopped onions)
- 2 tomatoes, finely chopped
- 1 t. fresh oregano, minced
Directions

1Place the cooked vegetable spaghetti squash in a lightly oiled pie plate.

2Mix the tomatoes, herbs and oil

3and spoon onto the squash.

4Top with cheese and broil until cheese is melted.
