  • 3 c. hot cooked vegetable spaghetti squash
  • 1 T. vegetable oil
  • 1/2 lb. mozzarella cheese, sliced thin
  • 1 1/2 T. snipped chives (or 1 T. chopped onions)
  • 2 tomatoes, finely chopped
  • 1 t. fresh oregano, minced

Directions

    Place the cooked vegetable spaghetti squash in a lightly oiled pie plate.

    Mix the tomatoes, herbs and oil
  3. 3
    and spoon onto the squash.

    Top with cheese and broil until cheese is melted.
