- 1 c. quick cooking grits
- 4 c. water
- 11 oz. can drained Mexicorn
- 9 oz. pkg. thawed and drained frozen spinach
- 1 pkg. Taco Seasoning
- 2 T. reduced fat butter
- 2 c. reduced fat shredded cheddar
Directions

1Follow package directions to cook 1 c. grits in 4 c. water. Combine cooked grits with remaining ingredients except 1 c. of cheese.

2Pour into a buttered 9 by 13-inch baking dish.

3Sprinkle remaining cheese on top.

4Bake for 30 minutes at 375 degrees. Serve hot.
