- 12 lb spinach
- 14 cup onion, chopped
- 14 cup celery, chopped
- 14 cup leek, chopped
- 1 cup water
- 12 teaspoon dried thyme
- 1 tablespoon coconut oil
- 1 14 teaspoons garlic, chopped
- 116 teaspoon sea salt
Directions

1Chop the vegetables.

2Heat up a large pot on the stove, add the coconut oil.

3Add the vegetables and garlic, and saute for 5 minutes.

4Now add water and thyme.

5Simmer the pot for around an hour, then allow to cool.

6Once the soup is back at room temperature, use your blender to puree it to the texture you want.

7Then heat it up again in the pot, and serve.
