Ingredients

  • 3 leeks, sliced
  • 3 c. potatoes
  • 3 c. chicken broth
  • 2 Tbsp. margarine
  • 1/2 c. milk
  • 1 c. light cream
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. minced chives
  • 1/4 tsp. paprika

Directions

    Cook leeks and peeled sliced potatoes in chicken broth, covered, until tender.

    Run through food mill or sieve or blender. Return to pot and add other ingredients (except chives and paprika).

    Do not boil after you add the milk and cream.

    Serve either hot or cold and garnish with the chives and paprika. Serves 4.
