- 10 oz blanched almonds
- 2/3 cup sugar
- 1 None vanilla pod, split
- 1 tbsp butter
- 1 pinch salt
Directions

1Preheat oven to 375°F. Line a large baking sheet with parchment paper. Spread almonds in a single layer on baking sheet and bake 10-12 mins, until lightly golden.

2In a medium, heavy-based saucepan combine sugar, 1/4 cup water and vanilla pod. Stir over medium heat until sugar dissolves. Boil without stirring 8-10 mins, until the mixture is golden around the edges and resembles toffee. Remove and discard vanilla pod. Gently stir in almonds, along with butter and salt. Pour mixture onto the baking sheet. Using a wooden spoon, spread into a single layer and let cool 30 mins. Break into pieces and store in an airtight container until ready to serve.
