- 2 egg yolks
- 1 3/4 c. milk
- 1/2 c. cooking oil
- 1 3/4 c. all-purpose flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 2 egg whites
Directions

1In a small mixing bowl, beat egg yolks with fork.

2Beat in milk and cooking oil.

3In a large bowl, stir together the flour, baking powder and salt.

4Add egg mixture to flour mixture all at once.

5Stir mixture until blended, but still slightly lumpy.

6In small mixer bowl, beat egg whites until stiff peaks form. Carefully fold egg whites into egg-flour mixture.

7Leave a few fluffs of egg whites.

8Do not overmix.

9Lightly grease waffle maker.

10Cook; do not lift lid while baking.

11Makes 3 or 4 (9-inch) waffles.
