Walnut Brownies

  • 4 tbsp margarine, melted, cooled
  • 2 None eggs, at room temperature
  • 1/2 cup brown sugar
  • 3/4 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 cup walnuts, finely chopped
  • 2.5 oz dark chocolate, finely chopped
  • 1/4 cup pitted prunes, finely chopped

    Preheat oven to 350°F. Grease and line a 10x6 inch rimmed baking pan with parchment paper.

    Combine margarine, eggs and sugar. Sift together flour, cocoa powder and baking powder then fold in. Add 1/4 cup walnuts, chocolate and prunes and mix until combined. Transfer to prepared pan and smooth surface. Sprinkle with remaining walnuts and bake for 15-20 mins, until a skewer inserted in the center comes out almost clean. Let cool completely in pan. Cut into 18 pieces.
