Walnut Cake

  • 3 c. nutmeats, chopped fine
  • 6 eggs, separated
  • 1 1/2 c. flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. vanilla

    Beat the egg yolk until very light; add the sugar gradually and beat well.

    Sift together the flour, baking powder and salt; add the nuts and then combine with egg mixture.

    Beat well.

    Stir in the stiffly beaten egg whites and vanilla.

    Bake in 2 layer cake tins in a moderate 350° oven from 30 to 40 minutes.
