  • 1 egg yolk
  • 1 teaspoon Dijon-style mustard
  • 1 tablespoon white-wine vinegar, preferably champagne vinegar, plus more as needed
  • Juice of one lemon, or to taste
  • 1 teaspoon finely minced garlic
  • 1 tablespoon finely chopped shallots
  • 1/2 teaspoon sugar
  • 1/2 cup walnut oil
  • 1/2 cup peanut oil
  • Salt to taste, if desired
  • Freshly ground pepper, preferably white, to taste

Directions

    Beat together the egg yolk, mustard, vinegar, lemon juice, garlic, shallots and sugar.

    Beating rapidly with a wire whisk, slowly add the walnut and peanut oils.
