Walnut Stuffed Chicken Breasts

- 2 c. toasted bread crumbs
- 4 Tbsp. melted butter, divided
- 1/4 c. chopped onion
- 1/4 c. chopped celery
- 2 tsp. parsley flakes
- 1/2 c. chopped walnuts
- salt and pepper
- 4 small chicken breasts (boned)
- juice of 1/2 lemon
Directions

1Combine bread crumbs, half of butter, onion, celery, parsley, walnuts, salt, pepper and enough water to moisten.

2Make 4 mounds of stuffing each on a square of foil.

3Arrange on small cookie sheet.

4Brush both sides of chicken breasts with lemon juice.

5Then spoon remaining butter over.

6Season with salt and pepper.

7Place open chicken breast over each mound.

8Shape around stuffing, tucking sides under.

9Bake at 350° for 45 to 50 minutes.

10Makes 4 servings.
