- 1/2 cup chopped unpeeled red
- apple
- 2 T butter
- 2 T flour
- 2 tsp curry powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp sugar
- pinch of ginger (optional)
- 1/2 bay leaf
- 2 cups chicken stock
- 2 cups coarsely chopped

Directions

1Saute celery,onion, & apple in butter until clear & tender.Blend in dry ingredients. Gradually add stock, stirring until thickened. Add chopped chicken.

2Serve with rice,chutney,toasted coconut,slivered almonds, chopped peanuts,hard boiled eggs,chopped cooked bacon, & raisins.
