  • 1/2 cup chopped celery(stalks
  • & leaves)
  • 1/2 cup chopped onions
  • 1/2 cup chopped unpeeled red
  • apple
  • 2 T butter
  • 2 T flour
  • 2 tsp curry powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp sugar
  • pinch of ginger (optional)
  • 1/2 bay leaf
  • 2 cups chicken stock
  • 2 cups coarsely chopped
  • chicken

Directions

    Saute celery,onion, & apple in butter until clear & tender.Blend in dry ingredients. Gradually add stock, stirring until thickened. Add chopped chicken.

    Serve with rice,chutney,toasted coconut,slivered almonds, chopped peanuts,hard boiled eggs,chopped cooked bacon, & raisins.
