- 16 oz. self-rising flour (can use plain flour, but add 2 tsp. baking powder)
- 8 oz. margarine
- 6 oz. caster sugar
- 6 oz. currants
- 1 large or 2 small eggs
Directions

1Rub margarine (mix) into flour.

2Add caster sugar.

3Add currants.

4Beat eggs and mix into dry ingredients.

5The mixture should be easy to roll out to approximately 1/4-inch thick.

6Add another egg or a little milk if mixture is too dry.

7Cut into rounds and bake on a griddle or frying pan.

8When slightly browned, turn and bake on the other side.
