- 1 teaspoon Extra Virgin Olive Oil
- 2 cups Chopped Fresh Spinach
- 1 clove Garlic, Chopped
- Salt And Pepper
- 2 slices Seedy, Nutty Bread
- 1- 1/2 ounce, weight Smoked Gouda Cheese
- 1 Tablespoon Butter, Divided
Directions

1Heat a pan over medium heat, and add your olive oil.

2When pan is warm, add spinach and garlic.

3Using tongs, toss the spinach and garlic regularly, until spinach wilts, about 23 minutes.

4Add a pinch of salt and pepper, and set aside.

5Top one slice of bread with the cheese, and then top that with sauteed spinach.

6Smear the top piece of bread with 1/2 tablespoon butter, and place on the sandwich, butter side up.

7Wipe your skillet clean with a paper towel, and return to medium heat.

8Add remaining 1/2 tablespoon butter to the pan and allow to melt.

9Place the sandwich in the pan (buttered bread side up) and move around until the whole bottom piece of the sandwich is coated with the melted butter.

10Cook the sandwich for 34 minutes, making sure that the bread isnt burning.

11Flip over, and cook 34 minutes more, until bread has browned and cheese is gooey.
