- 1/2 cup shortening
- 1 1/4 cups sugar
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 3 egg whites
Directions

1Cream shortening; gradually add sugar, beating well.

2Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in vanilla.

3Beat egg whites (at room temperature) until stiff peaks form; fold into batter.

4Pour batter into 2 greased and floured 8-inch round or square cake pans. Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove layers from pans, and let cool completely.
