  • 1/2 cup wild rice
  • 1 tablespoon butter
  • 1/4 cup finely chopped onion
  • Salt to taste if desired
  • Freshly ground pepper to taste
  • 1 1/4 cups chicken broth

Directions

    Rinse the rice in several changes of cold water.

    Drain well.

    Melt the butter in a small saucepan and add the onion.

    Cook, stirring, until wilted.

    Add the rice and stir.

    Add salt and pepper.

    Add the broth and bring to a boil.

    Cover closely and let simmer 45 minutes or until rice ''blooms'' and is tender.

    If any liquid remains, uncover and cook until liquid evaporates, stirring occasionally.
