- 1/2 cup wild rice
- 1 tablespoon butter
- 1/4 cup finely chopped onion
- Salt to taste if desired
- Freshly ground pepper to taste
- 1 1/4 cups chicken broth
Directions

1Rinse the rice in several changes of cold water.

2Drain well.

3Melt the butter in a small saucepan and add the onion.

4Cook, stirring, until wilted.

5Add the rice and stir.

6Add salt and pepper.

7Add the broth and bring to a boil.

8Cover closely and let simmer 45 minutes or until rice ''blooms'' and is tender.

9If any liquid remains, uncover and cook until liquid evaporates, stirring occasionally.
