  • 1 (6 1/4 oz.) quick cooking wild rice
  • 1 c. cooked, chopped chicken
  • 1 (8 oz.) sliced water chestnuts, drained
  • 1 c. finely chopped celery
  • 1 1/4 c. finely chopped onion
  • 1 c. light mayo
  • 1 (10 3/4 oz.) can condensed cream of mushroom soup

Directions

    Cook rice according to directions.

    Combine rice, chopped chicken, water chestnuts, celery and onion.

    Place into 2 1/2-quart baking dish; stir mayonnaise and mushroom soup together and spread on top of chicken mixture.

    Bake, covered, in preheated 325° oven for 1 hour.
