- fresh lettuce leaves
- 4 finely chopped green onions
- 5 to 6 slices fat back
- 1 tsp. salt
- 2 tsp. vinegar

1Pick fresh lettuce leaves.

2Wash carefully and chop about 4 cups of it into a large bowl.

3Add 3 or 4 finely chopped young onions and tops and toss mixture lightly.

4Fry fat; remove from grease on paper towel.

5Let drain.

6To fat grease, add 1 teaspoon salt and 2 teaspoons vinegar; stir well.

7Heat and pour immediately over lettuce to coat all leaves.

8Serve with cornbread and fatback meat.
