- 1 c. cooked lima beans (fresh or frozen)
- 1 c. green beans, cut into 1-inch lengths
- 1 c. cooked black-eyed peas
- 1/2 c. thinly sliced water chestnuts
- 1 medium-size red onion, chopped or cut into thin rings
- 1/4 c. wine vinegar
- 1 clove garlic, finely minced
- 7 oz. olive oil
- salt and freshly ground black pepper
- 24 cherry tomatoes
- 1/4 c. chopped parsley
