Ingredients

  • 1 c. cooked lima beans (fresh or frozen)
  • 1 c. green beans, cut into 1-inch lengths
  • 1 c. cooked black-eyed peas
  • 1/2 c. thinly sliced water chestnuts
  • 1 medium-size red onion, chopped or cut into thin rings
  • 1/4 c. wine vinegar
  • 1 clove garlic, finely minced
  • 7 oz. olive oil
  • salt and freshly ground black pepper
  • 24 cherry tomatoes
  • 1/4 c. chopped parsley
