  • 4 c. cut-up cooked or canned yams or sweet potatoes
  • 1/4 c. butter, melted
  • 1/2 c. light cream
  • 4 eggs, separated
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. cinnamon
  • 4 egg whites

Directions

    Cook yams or sweet potatoes.

    Cover and boil in just enough salted water to cover until they can be pierced easily with a fork, about 40 minutes.

    Cool and peel.
