  • 2 small Yellow Squash - sliced in 1 inch pieces
  • 1 Tablespoon Coconut Oil
  • 1 Tablespoon Dill - fresh or dried
  • 1 Shallot, diced
  • 1 can Lentils - rinsed & drained

Directions

    Add Coconut oil to a 10 inch skillet on medium heat,let melt. Carefully toss in sliced Squash & diced Shallot. Saute 7-8 minutes or until just soft. Sprinkle with Dill and add Lentils. Stir until combined and heated through. Serve warm - enjoy!
