- 2 small Yellow Squash - sliced in 1 inch pieces
- 1 Tablespoon Coconut Oil
- 1 Tablespoon Dill - fresh or dried
- 1 Shallot, diced
- 1 can Lentils - rinsed & drained
Directions

1Add Coconut oil to a 10 inch skillet on medium heat,let melt. Carefully toss in sliced Squash & diced Shallot. Saute 7-8 minutes or until just soft. Sprinkle with Dill and add Lentils. Stir until combined and heated through. Serve warm - enjoy!
