- 2 tomatoes, cut into eighths
- 6 zucchini, cut into 1/2-inch slices
- 4 ears of corn kernels, cut from cob
- 1/2 tsp. oregano
- salt and pepper
Directions

1In a large skillet, place on grill rack.

2Heat oil and saute tomatoes until mushy.

3Stir in zucchini and corn kernels.

4Add oregano.

5Stir to blend.

6Cover and simmer, stirring occasionally, until zucchini is tender.
