  • 1 c. Bisquick
  • 1 c. liquid egg substitute
  • 1/3 c. buttermilk
  • 2 Tbsp. canola oil
  • 3 c. grated unpeeled zucchini
  • 1 medium grated onion
  • 1/2 c. grated cheese
  • 1/2 tsp. pepper and oregano
  • 1 large clove garlic, minced
  • 1/2 c. water chestnuts, sliced

Directions

    Preheat oven to 350°.

    Combine Bisquick, egg substitute, buttermilk and oil.

    Mix well.

    Stir in all remaining ingredients. Pour into a 9 x 13-inch glass baking dish that has been sprayed with nonstick vegetable spray.
