- 3 eggs
- 1 c. vegetable oil
- 1 1/2 c. sugar
- 3 medium size zucchini, grated and well drained
- 2 tsp. vanilla
- 2 c. sifted flour
- 1/4 tsp. baking powder
- 2 tsp. baking soda
- 3 tsp. ground cinnamon
- 1 tsp. salt
- 1 c. raisins, soaked in water
- 1 c. chopped nuts
Directions

1Beat eggs lightly in a large bowl; stir in oil, sugar, zucchini and vanilla.

2Sift flour, baking powder, baking soda, cinnamon and salt onto wax paper.

3Stir into egg mixture until well blended.

4Stir in raisins and nuts.

5Spoon batter into well-greased 8 x 5 x 3-inch loaf pans.

6Bake in moderate oven (375°) for 1 hour or until center springs back when lightly pressed.

7Cool in pans on wire rack for 10 minutes.

8Remove from pans and cool completely.
