- 4 eggs, well beaten
- 1 1/2 cups sugar
- 1 cup vegetable oil
- 3 1/2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 teaspoon ground cinnamon
- 2 cups grated zucchini
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
Directions

1Combine eggs, sugar, and oil; beat well. Sift together dry ingredients; add to egg mixture, stirring until blended. Stir in zucchini, pecans, and vanilla; mix well.

2Pour batter into 2 greased 8 1/2- x 4 1/2- x 3-inch loaf pans. Bake 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes, and remove from pans; cool completely.
