- 4 c. zucchini, sliced (raw)
- 1 medium onion (raw)
- 1 medium garlic clove, crushed
- 1/4 tsp. dill weed
- 1/4 tsp. thyme leaves
- 2 Tbsp. canola oil
- 2 medium tomatoes (raw)
- 1 tsp. Worcestershire sauce
- 2 Tbsp. lemon peel
- 2 tsp. lemon juice
Directions

1Shred zucchini and finely chop onion; saute with garlic, dill weed, thyme and oil until zucchini is tender.

2Remove from heat. Finely chop tomatoes and add with lemon peel and Worcestershire sauce.

3Combine with other ingredients.

4Refrigerate until chilled.

5Stir in lemon juice just before serving.

6Serve with crackers.
