- 3 eggs
- 1 1/2 c. sugar
- 3/4 c. vegetable oil
- 1 tsp. vanilla
- 2 c. coarsely grated zucchini
- 2 c. flour
- 1 Tbsp. cinnamon
- 2 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. baking powder
- 1 c. chopped nuts
Directions

1Beat the eggs until frothy.

2Beat in sugar, vegetable oil and vanilla; mix until thick and lemon color.

3Stir in zucchini.

4Add flour, cinnamon, baking soda, salt and baking powder; mix well. Add chopped nuts.

5Coat two loaf pans (8 x 4 x 3-inch) with nonstick cooking spray.

6Bake at 350° for about 50 minutes.

7Let cool in pan for 10 minutes before removing onto wire rack.
