  • 3 eggs
  • 2 c. sugar
  • 2 tsp. vanilla
  • 1 c. oil
  • 2 c. zucchini, peeled, grated and drained
  • 3 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 c. crushed pineapple, drained
  • 1 c. pecans, chopped
  • 3/4 tsp. nutmeg
  • 1 1/2 tsp. cinnamon
  • 1 c. dates, chopped

Directions

    Beat eggs, sugar, vanilla and oil until fluffy.

    Stir in rest of ingredients.

    Bake in greased loaf pans (2) at 350° for 40 minutes or until done.
