- 1/4 c. salad oil
- 2 lb. zucchini, sliced
- 4 tomatoes, in chunks
- salt and pepper to taste
- 1 medium sliced onion
- 1 clove garlic
- 1 green pepper, chopped
- parsley for garnish
- Parmesan cheese for garnish
Directions

1Heat oil in skillet and saute onions and garlic.

2Add zucchini, tomatoes, green pepper, salt and pepper.

3Cook until tender, 10 to 15 minutes.

4Sprinkle with minced parsley and Parmesan cheese.

5Serve over hot buttered rice.
