- 4 c. sliced unpeeled zucchini
- 1 c. chopped onion
- 1/2 c. margarine
- 2 Tbsp. parsley flakes or fresh
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. garlic powder
- 1/4 tsp. basil
- 1/4 tsp. oregano
- 2 eggs, beaten
- 8 oz. shredded Mozzarella
- 10-inch pie crust
Directions

1Cook zucchini and onion in butter until soft.

2Add seasonings. In large bowl, beat eggs; add cheese and zucchini mixture. Spread 1 to 2 teaspoons mustard on crust, then mixture.

3Bake at 375° for 20 to 30 minutes.

4Let stand 10 minutes.

5Can use 8 ounces crescent dinner rolls for crust in 10-inch pie plate or 12 x 8-inch baking dish.
