Zucchini Walnut Bread

Ingredients

  • 1 c. nuts, chopped
  • 4 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 3 1/2 c. unsifted regular flour
  • 1 1/2 tsp. soda
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 3/4 tsp. baking powder
  • 2 c. zucchini, grated
  • 1 c. raisins (optional)
  • 1 tsp. vanilla

Directions

    Beat eggs gradually into oil.

    Combine dry ingredients; add alternately with zucchini.

    Stir in raisins, nuts and vanilla. Pour into 2 greased and lightly floured loaf pans.

    Bake at 350° for 55 minutes; let stand 10 minutes.

    Turn onto wire racks to cool.

    Can be glazed with powdered sugar.
