  • 1 large onion, sliced
  • 1 tablespoon olive oil
  • 1 garlic clove, crushed
  • 8 boneless skinless chicken thighs
  • 2 apples, cored and cut into chunks
  • 4 ounces dried apricots
  • 12 cup white wine
  • 14 cup fresh parsley, chopped

Directions

    Place a heavy pan over high heat, then add the onion with the oil.

    Stir well and cook for 2 minutes, then add the garlic.

    Add the chicken, then cook for a few minutes, turning each piece until they all have a little colour.

    Add the chopped apples and dried apricots, stir well, pour in the wine, then bring to a boil.

    Simmer, covered, for 20 minutes, until the chicken is tender.

    Sprinkle with the parsley.
