Ingredients
- 1 gal. ripe tomatoes
- 2 md. onions, sliced
- 1/4 tsp. cayenne pepper
- 2 cups vinegar
- 1-1/2 tbsp. broken cinnamon stick
- 3 cloves garlic, minced
- Spices, to taste
- 1 tbsp. paprika
- 1 cup sugar
- 2-1/2 tsp. salt
Directions

1Wash tomatoes, remove cores and quarter.

2Cook until very soft and put through a fine sieve.

3Cover onions with water.

4Cook until very tender; drain and put through sieve.

5Mix with tomatoes.

6Add pepper and boil until reduced to 1/2 of original volume.

7Combine vinegar, cinnamon and garlic.

8Add spices tied in muslin or cheesecloth bag.

9Simmer vinegar mixture 30 minutes.

10Bring to full rolling boil, remove from heat, cover and set aside.

11Remove spice bag and add vinegar mixture to tomato mixture.

12Add paprika, sugar and salt.

13Boil rapidly until catsup is thick.

14Pour boiling hot into sterilized jars and seal at once.
