- 6 oz. Second Nature Egg Substitute or 3 eggs
- 2 c. sugar
- 1 c. applesauce
- 1 Tbsp. vanilla
- 3 c. flour
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 4 c. grated apples
- 1/2 to 1 c. pecan pieces
Directions

1Preheat oven to 325°.

2Spray an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with low-fat spray.

3Mix egg substitute, sugar and applesauce; add vanilla.

4Combine flour, baking soda and cinnamon.

5Add to egg mixture alternating with apples.

6Add pecans.

7Bake 1 hour and 10 minutes.

8Makes 2 loaves.

9For easier slicing and extra moist, rich bread, wrap warm loaf tightly after removing from pan.
