- 1 c. dried apricots
- 1/2 c. water
- 1 stick margarine
- 1 c. sugar
- 1 egg
- 1/2 c. orange juice
- 2 c. flour
- 1/4 tsp. baking soda
- 1 tsp. salt
- 1 c. nuts, chopped
Directions

1Soak dried chopped apricots in water at least 1 hour.

2Drain and reserve 1/4 cup liquid.

3Cream margarine and sugar; add egg. Add sifted dry ingredients alternately with orange juice and reserved water.

4Stir in apricots and nuts.

5Bake in a greased and floured loaf pan or 2 small pans at 350° about 1 hour.

6Let cool before slicing.

7This freezes well.

8If not enough water leftover from apricots, add water to get desired amount.
