- 1 c. vegetable oil
- 2 c. granulated sugar
- 3 eggs, beaten
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1 tsp. soda
- 1/4 tsp. salt
- 2 c. Pillsbury all-purpose enriched flour
- 1 c. chopped pecans
- 1 jar (7 3/4 oz.) junior size Gerber apricot baby food
Directions

1Mix together oil and sugar on low speed of electric mixer. Add eggs and sift in all dry ingredients.

2Mixture will become very stiff.

3Beat in apricot baby food.

4Stir in by hand chopped nuts.

5Pour into greased Bundt pan. Bake at 350° for 1 hour and 10 minutes.

6Bake until splits in top are done.

7Test for doneness by sticking toothpick in center of splits until it comes out clean.

8Top will be a little shiny and crusty.

9Serve plain by itself or good with ice cream, fruit or pudding. Makes an excellent birthday cake.

10Keeps moist a long time in a closed cake container.
