- 1 c. dried apricots, cut up
- 1 c. boiling water
- 1/2 c. butter, softened
- 1 c. sugar
- 3/4 c. sour cream
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. grated orange peels
- 1/2 c. chopped nuts
Directions

1In a small bowl combine apricots and water.

2Let stand 5 minutes.

3Drain and discard liquid.

4Set aside.

5In a mixing bowl cream butter and sugar until fluffy.

6Add sour cream and mix well. Combine dry ingredients and add to creamed mixture just until moistened.

7Fold in orange peels, nuts and apricots.

8Batter will be very stiff.

9Fill paper lined muffin pans 3/4 full.

10Bake at 400° for 18 to 20 minutes.
