- 6 eggs, slightly beaten
- 4 Tbsp. parsley, chopped
- 1/2 bunch green onions, chopped
- 4 Tbsp. butter or margarine
- 1 Tbsp. fresh mint, chopped or 1 tsp. dried
- salt and pepper to taste
Directions

1Mix all ingredients except butter.

2Place 1 1/2 tablespoons butter in pan and heat.

3Drop 1/2 of the mixture in a skillet. When set, turn the omelet on the other side.

4Fry until golden brown.

5Repeat with the rest of the mixture to yield two omelets. Serves 4.
