  • 2 Tbsp. flour
  • 2 tsp. margarine
  • 3/4 c. milk
  • 1 Tbsp. onion, finely chopped
  • 1/2 c. grated Cheddar cheese
  • 1 1/2 c. asparagus, cooked
  • 3 egg yolks, beaten
  • 3 egg whites, stiffly beaten

Directions

    Melt margarine.

    Stir in flour.

    Add milk slowly and stir until thickened.

    Add yolks, cheese and onion; stir until cheese melts.

    Fold in asparagus after removing from heat; season to taste.

    Fold in egg whites.

    Bake in greased 1 quart casserole at 350° for 45 minutes.
