- 1 1/4 c. Monterey Jack cheese, grated
- 3/4 c. grated mild Cheddar
- 1 (9-inch) deep-dish frozen pie shell
- 1 (4 oz.) can diced green chilies
- 1 c. half and half
- 3 eggs, beaten lightly
- 1/2 tsp. salt
- 1/8 tsp. ground cumin
Directions

1For the freezer:

2Spread the Monterey Jack cheese and half the Cheddar over the bottom of the pie shell.

3Sprinkle diced chilies over cheeses.

4Stir together in a bowl the half and half, eggs and seasonings.

5Pour carefully into the pie shell.

6Sprinkle with remaining Cheddar.

7Cover the pie with foil and freeze (optional).
