Ingredients

  • 4 cups quick-cooking oatmeal or 4 cups rolled oatmeal
  • 3 teaspoons baking powder
  • 2 cups skim milk
  • 4 eggs or 1 cup egg substitute
  • 15 ounces pumpkin
  • 1 cup Splenda granular, sugar substitute (may use sugar or Splenda Blend)
  • 2 teaspoons vanilla
  • pumpkin pie spice

Directions

    Mix all ingredients together in a large bowl.

    Pour into a sprayed 11x7 or 9x13 Pan.

    Bake @ 350 for 50 minutes.
