Baked Wild Rice

  • 1 c. raw wild rice
  • 1 (10 1/2 oz.) can consomme
  • 1 (3 oz.) can sliced, broiled mushrooms
  • 1 Tbsp. butter or margarine

Directions

    Wash rice thoroughly.

    Place in greased 1 1/2-quart casserole. Add undiluted consomme and liquid from mushrooms.

    Let stand 3 hours.

    Set oven at 350°.

    Cover casserole and bake 45 minutes, adding a little water if rice becomes too dry.

    Heat mushrooms in butter.

    Remove rice from oven, lower heat to 300°.

    Stir mushrooms and butter into rice.

    Return to oven and bake, uncovered, until all liquid is absorbed.
