Banana Pudding

Ingredients

  • 1/4 c. sugar
  • 5 Tbsp. flour
  • 1/4 tsp. salt
  • 2 c. milk
  • 3 to 4 egg yolks, slightly beaten
  • 2 tsp. vanilla
  • 1 large pkg. vanilla wafers
  • 4 to 6 Tbsp. sugar
  • 3 to 4 egg whites, beaten
  • 4 to 5 large ripe bananas

Directions

    Combine 1/4 cup sugar, the flour and salt; add milk gradually, stirring until smooth.

    Mix small amount of mixture with beaten egg yolks and return to double boiler.

    Remove from heat and add vanilla.

    In large serving dish, put a layer of the cookies, layer of mixture, banana layer and sprinkle with little lemon juice. Repeat until all is used, then top with meringue.

    Beat egg whites until stands in peaks; add the 4 to 6 tablespoons sugar and about 1 tablespoon lemon juice.

    Spread on top of the pudding.

    Bake until just tan color.
