- 1 c. bulghur
- 1 1/2 c. boiling water (enough to cover bulghur)
- 1 to 1 1/2 tsp. salt
- 1/4 c. fresh lemon juice
- 1 tsp. garlic, crushed
- 1/4 c. olive oil
- 1 c. chopped fresh parsley
- pepper to taste
- 1/4 c. green pepper, diced
- 1/4 c. carrots, diced
- 1/4 c. cucumber, diced
- 1 c. tomatoes, diced
- 1/4 c. black olives, pitted and diced
Directions

1Cover bulghur with boiling water.

2Add salt and let stand 30 minutes; drain any excess water.

3Stir in lemon juice, garlic and oil.

4Add parsley and pepper.

5Toss in vegetables and olives. Serve at room temperature.
