Ingredients

  • 1 c. bulghur
  • 1 1/2 c. boiling water (enough to cover bulghur)
  • 1 to 1 1/2 tsp. salt
  • 1/4 c. fresh lemon juice
  • 1 tsp. garlic, crushed
  • 1/4 c. olive oil
  • 1 c. chopped fresh parsley
  • pepper to taste
  • 1/4 c. green pepper, diced
  • 1/4 c. carrots, diced
  • 1/4 c. cucumber, diced
  • 1 c. tomatoes, diced
  • 1/4 c. black olives, pitted and diced

Directions

    Cover bulghur with boiling water.

    Add salt and let stand 30 minutes; drain any excess water.

    Stir in lemon juice, garlic and oil.

    Add parsley and pepper.

    Toss in vegetables and olives. Serve at room temperature.
