Basil Stuffed Tomatoes

  • greek yogurt
  • basil leaves amount to your liking
  • 1 grape tomatoes Carton of
  • 1/2 lemon peel included
  • pepper
  • dried shallots or Onions, optional
  • 1/4 teaspoon olive oil

Directions

    Start by preparing your tomatoes, half them and pull out the seeds. Then set them aside, and get to work on your filling.

    For the filling, add some Greek yogurt to a small bowl along with some finely chopped basil.

    Stir the basil and yogurt together until smooth. You can even add this to a blender for a smoother filling.

    Add in the olive oil, salt & pepper, and dried shallots to taste. I even added some drops of lemon into the mixture to make it more zesty.

    Pour the seasoned basil and yogurt mixture into a small ziploc baggie, pushing it into the corner. Cut the corner and pipe the filling into the halved tomatoes.

    Garnish with some extra basil leaves and enjoy this delicious appetizer!
