Beefy Squash Casserole

Ingredients

  • 1 1/2 lb. ground beef
  • 1/2 medium bell pepper, chopped
  • 1/2 medium onion, chopped
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 1/2 c. cooked rice
  • 1 c. grated Cheddar cheese
  • 1 can tomatoes and chilies, chopped (not drained)
  • 1/4 tsp. cumin
  • 1/4 tsp. oregano
  • 4 medium yellow squash or zucchini

Directions

    Brown beef, bell pepper and onion; drain.

    Steam squash or zucchini until just tender, but slightly crunchy.

    Mix all ingredients, except cheese, in large bowl.

    Grease a 9 x 13-inch baking dish and pour in mixture.

    Bake at 350° for 20 minutes. Top with grated cheese and bake 10 minutes more or until cheese is melted and bubbly.
