  • 2 qt. blanched, peeled beets
  • 3 1/2 c. shredded cabbage
  • 1 c. granulated sugar
  • 1 oz. mixed whole spices (cinnamon, cloves and allspice)
  • 1 1/2 c. cider vinegar
  • 1/3 c. red peppers
  • 3 Tbsp. salt or to taste

Directions

    Put cabbage, beets and red peppers through food chopper. Place in saucepan with vinegar, sugar and salt.

    Tie spices loosely in a bag.

    Let simmer until beets are tender.

    Remove spices and fill hot jars; seal.
