  • 13 whole Large Idaho Potatoes, Skinned, Chopped
  • 4 Tablespoons Butter
  • 1-1/2 Tablespoon Onion Powder
  • 2 Tablespoons Unsweetened Almond Milk
  • Your Favorite Toppings, To Serve

Directions

    Clean, skin and chop potatoes (I cut mine into quarters).

    In a large pot, add chopped potatoes. Fill pot with enough water until potatoes are covered. Bring to boil over medium-high heat and cook until potatoes are tender and fall off when pierced with a fork, about 25-30 minutes. Drain water, leaving about 1/4 cup water remaining in pan.

    Add butter, onion powder and almond milk. Mash or use an immersion blender until smooth.

    Top with your favorite toppings!
